When it comes to cooking with tomatoes, the true winner is canned tomatoes. They are not only easier to work with (with skipping the whole process of blanching, peeling, taking the stem out, and the whole nine yards fresh tomatoes need), but they are also surprisingly more nutritious.
That is because with how long some fresh tomatoes are sitting in the produce aisle, slowly losing their nutrients as they age. With canned tomatoes, they are canned right after they are taken off the vine, and the whole canning process ensured that all the good nutrients are stored in the sauce.
